Description of the issue

I'm building some custom php pages and wanted to switch from standard UTF-8 to ISO-8851-1 setting. But I notice that the data is still outputted as UTF-8. Do I need to restart the FMP server to get the change or what am I doing wrong.

Expected result

ISO-8851-1 format

Actual result

UTF-8 format
